I got to meal prep early today. I’m learning that as this baby belly gets bigger my stamina for standing in the kitchen gets compromised. I just can’t do it! If I start cooking early I can get a lot more done before I need to rest and seeing as how I’m trying to make a few make ahead freezer meals at the same time as lunch meal prep this is important.
This week I made a beef stew using the my go to recipe from The Joy of Cooking. This was probably the first cook book I ever owned and it’s so great for classic recipes. I used to use my mom and my grandma’s old copies. The beef stew recipe is great and easy modified depending on what root veggies you have on hand. My hubby loves this meal especially with some crusty bread or biscuits in the side. We will have this for dinner tonight and he will have it for a few lunches this week.
I also made a double batch of my chipotle turkey meatballs which I haven’t made in a while but I love them. I’ll have these for lunches with brown rice and roasted brussels sprouts that I had in the oven at the same time. I like to eat this meal with dijon mustard. Really good and really great for anyone tracking macros. It’s easily adjustable and measurable plus it’s high protein, lower fat and good complex carbs.
I made a pot of brown rice while all that was cooking. Multitasking.
For the freezer meals this week (in preparation Baby Garcia’s arrival) I made my gluten free chicken pot pie. I love this recipe and I made this version dairy free buy subbing the greek yogurt for coconut milk butter milk to use instead. Basically just a little vinegar added to full fat coconut milk. I’ve also used plain dairy free yogurt before and it works well. I wanted the full fats plus protein and carbs in this meal for breast needs needs so this should be a good. I’m hoping this freezes and cooks well, it should but I haven’t tried it so we will see.
I made two sweet things this week. I made another version of Joy’s peach cake plus I made Danielle Walker’s Pecan Sticky Buns from her Celebrations cook book. These are so delicious and are going in the freezer for when baby comes! They are a lot of work and a lot of calories plus are very sweet so not something I would make or eat that often but I want to have options when the time comes. I’ll likely need to keep my calories up for milk production. 😉
