I actually did meal prep yesterday morning before heading to present at the Serious About Fitness Camp because I knew today was a crazy day. We have another prenatal course all day, car seat inspection, and then a work event scheduled in the evening. It’s been a busy few weeks actually!
I went with the basics and made a meal I was making often. My chipotle meatballs and brown rice, easy, filing and tasty. Plus perfect macros.
I made the brown rice using leftover chicken broth I had as the liquid. Great for adding extra nourishment.
The meatballs I double the recipe and used ground turkey, spinach, onion, garlic, carrots and celery. I used the food processor to chop all the veggies and then just mixed it together and made meatballs. This will work for both hubby and I for lunches this week.
I had a squash to use up so I cut that up and put it in the oven with the meatballs at the same time.
The whole thing took no more than an hour and that will give us at least 10 meals for this week. This meal freezes well too.
Breakfasts have been smoothies with a side of toast so that’s easy and dinners I’ll make fresh most nights this week because I will have time.
