I’ve come to realize that now that I’m preggers I need to do meal prep first thing in the day. My stamina sucks these days and I’m so tired by late afternoon!
I had plans with my mamma this morning to shop for a body pillow (as mentioned in my latest preggie update). By the time I got home I needed a nap and my legs are so tired from walking the mall, what the heck?!
Soooo basically meal prep was as quick and minimal as possible. I made a big pot of minestrone inspired soup. Yep that’s it. hahah.
Basically I’ll have soup plus I figure I’ll try eggs and toast for breakfast. Fruit and salads as usual and probably smoothies. I may make that peach cake again from last week but I’ll do that later or tomorrow night. I’l also make sure to have leftovers after each dinner meal. That helps during the week. My macros are still 120P/245C/67F
The soup is really easy and it’s a spin on one my mom used to make. Here’s the recipe.
My easy minestrone soup:
Sauté 2lbs ground meat of choice ( I used chicken today) with one onion, 1/2 teaspoon of salt. When almost cooked through add in 2 garlic cloves minced and about 3 cups of roughly chopped veggies of choice ( I used zucchini, red pepper and baby kale). Add 1 teaspoon of dried basil and 1 teaspoon dried oregano. Add in either 1 jar of tomato sauce of choice or strained tomatoes (today I used a combination that included frozen roasted heirloom tomatoes I had from the farm that were thawed and I needed to use up). Add 1 carton of broth or homemade stock. Bring to a boil and reduce to a simmer. You can also add a cooked kidney beans, black beans or chickpeas. Today instead I added 1 large (450g) sweet potato spiralized like noodles but sometimes I just chop up the sweet potato and add with the rest of the veggies. Simmer until veggies are soft. Add pepper and more salt as needed. That’s it. It’s really tasty and a nice high protein soup option.
