Lemon, Coconut, Cranberry Protein Muffins

Dry Ingredients:
3/4 cup GF oat flour ( or other GF flour)
1/4 cup coconut flour
1/2 cup vanilla whey protein powder
1/2 cup Xylitol or Erythritol
1/4 tsp sea salt
1/2 tsp baking soda
1/2tsp xanthan gum (optional but helps with texture)
rind from 1 whole lemon

Wet Ingredients

1/2 cup liquid egg whites
1 T chia seeds
1/2 cup unsweetened applesauce
1/2 cup lemon juice
1/3 cup unsweetened coconut milk from a carton (or other nut milk)
1 tsp vanilla extract
20 drops coconut flavored stevia (optional)
1/2 cup shredded unsweetened coconut
1/2 cup fresh or frozen cranberries


  1. Preheat oven to 350 degrees. Grease lightly with coconut oil. (I use a silicone pad so nothing sticks)
  2. Mix chia seeds and lemon juice together in medium bowl and set aside
  3. Mix dry ingredients in large bowl
  4. Add the rest of the wet ingredients (except cranberries and coconut) to the chia mixture.
  5. Add wet ingredients to dry and mix together
  6. Fold in cranberries and coconut
  7. Divide among muffin cup holes
  8. Cook for 20-30 or until toothpick comes out clean

  1. I just made these and used ‘myfitnesspal’ app to work out the macros etc.
    1 serving = 118 kcal, f-4.1, C-11.7, P-9.6

    These tasted awesome! I may have had 3 in one sitting oops!
