Oatmeal Raisin Protein Breakfast Cookie

These were an experiment and this version no 1 turned out really good.
They are great as post workout snack! Not as sweet as a regular oatmeal cookie and more cakey then chewy texture.


3/4 cup wheat free oat flour
2 scoops vanilla whey protein powder
1 tsp cinnamon
1/2 tsp nutmeg
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp sea salt
3/4 tsp xantham gum (optional)
1/2 cup unsweetened applesauce
1/2 cup erythritol or  xylitol (birch sugar) or coconut sugar ( higher carb count)
3 packages of vanilla stevia
1/2 cup egg whites (next time I will try 2 eggs)
2 T melted coconut oil
3/4 cup wheat free oats
1/2 cup raisins


Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
Mix first 6 ingredients in a bowl and set aside. In a separate bowl blend erythritol, stevia, egg whites and oil. Add in dry ingredients from other bowl and blend. Fold in oats and raisins and drop 1 Tablespoon size spoonfuls of dough onto pan.  Cook for 10 min. Makes about 12 cookies.
