Apple Sage Breakfast Sausage

These are my new favourite breakfast options! They are gluten free, grain free, dairy and egg free, paleo and aip friendly.


  • 1lbs lean ground chicken (turkey, pork or a mix)
  • 1 apple finely chopped ( I love fuji apples)
  • 1.5 tsp dried ground sage
  • 1/2-3/4 tsp cinnamon (or more if you love cinnamon – I use 1 heaping teaspoon)
  • dash nutmeg (omit for aip)
  • dash of cayenne (omit for aip)
  • 1/2 tsp sea salt


Add your chopped apple to a bowl along with sage, cinnamon, nutmeg and salt. Mix together then mix in ground chicken by hand and shape into 4-6 patties depending on what your needs are. I usually do 6 small ones.

Heat cast iron pan with a touch of coconut oil or spray or you can heat your oven at 350 and cook in there. I like to cook these using the frying pan as it gives a more sausage like texture but you can just as easily bake them.

Cook each side until brown and cooked all the way through. About 6 min per side.

That’s it!

Side note: I find these tasty as is but if you wanted them a little sweeter you could add 5-10 drops of liquid stevia or 1 tablespoon of maple syrup. Just account for it in your carbs.

Apple + Cranberry Breakfast Sausages

Here’s a delicious variation to the above. A little change in ingredients and just follow the same directions.

  • 1lbs lean ground chicken
  • 1/2 an apple finely chopped ( I love fuji apples)
  • 1/2 cup dried cranberries (look for unsweetened if you want to keep carbs down)
  • 1.5 tsp dried ground sage
  • 1 tsp cinnamon
  • 5 drops of orange flavoured stevia ( I used NuNatural Brand) You could also use plain stevia + 1 tsp orange rind
  • 1/2 tsp sea salt
  • breakfast sausage
