Apple,Carrot & Oatmeal Cranberry Breakfast Cookie

I love a quick sweet carb loaded treat after my morning workouts. I hop in my car with my coffee and eat it on my drive to work. Ahhh such a nice moment, you know, the moment when your training is done and you are enjoying something tasty that will refuel you. Ahhh sweet bliss.

I also think you could double the maple syrup if you wanted it sweeter.

Wet Ingredients

  • 1 cup strained carrots baby food ( 2 small jars)
  • 1.5 cups of grated apple with skin ( about 3 small apples)
  • 1 T grated fresh ginger
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 T egg white

Dry ingredients

  • 1 cup GF oat flour
  • 1/2 cup  GF oats
  • 3 T ground flax seed
  • 3/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tsp stevia powder
  • 2.5 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup dried cranberries ( look for unsweetened)

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Mix wet ingredients together and set aside. Mix dry ingredients together. Add wet ingredients to dry ingredients. Once mixed through scoop batter onto pan in cookie shape. About 1/4 cup of batter for each cookie. Bake for 30 min until browned on the outside. Makes 8
