Banana Bread Protein Oats

mmmmm this is so good. Tastes like banana bread in a bowl and the steel cut oats give a great chewy texture. Here’s the recipe for 2 small servings  ( depending on your macros). Have one and save the other or serve it up to whomever you are having breaky with 😉

Ingredients

  • 1/2 cup GF steel Cut Oats ( I like Only Oats)
  • 1 cup water
  • 1/2 cup almond milk ( or more water)
  • pinch of sea salt
  • 3/4 tsp cinnamon
  • 3/4 tsp vanilla bean (or extract would work too)
  • 3/4 tsp powdered stevia
  • 1/8 tsp nutmeg
  • 1/2 cup liquid egg whites ( you can use more it just makes it more pudding like)
  • 1 very ripe banana
  • 1 tsp ground flax seed

Directions

In a small pot bring the water, milk and sea salt to a boil. Add oats, cinnamon, vanilla, nutmeg and stevia. Cover, reduce heat and simmer for 15 min stirring 3 times. In the meantime mash the banana in a bowl. Wisk in the egg whites and flax seed. Add to pot and wisk then and cover and cook for 5 min, stirring frequently. The egg whites are pasteurized so you just need to heat them through.
