Blueberry Thyme Breakfast Sausages

These are one of my favourite breakfast options! They are gluten free, grain free, dairy and egg free, paleo and aip friendly.

Ingredients:

1lbs lean ground meat of choice (bison, venison, pork, chicken or turkey would all work well)
1/2 cup frozen blueberries
1 tsp thyme
1/2 tsp sea salt & pepper

Directions:

Add your blueberries to a bowl along with thyme, salt and pepper. Mix together then mix in ground meat by hand and shape into 5 0r 6 patties.

Heat cast iron pan with a touch of coconut oil or heat your oven at 350. I like to cook these using the frying pan as it gives a more sausage like texture but you can just as easily bake them.

Cook each side until brown and cooked all the way through. About 6 min per side.
