Eggs are so versatile and you could literally make these with almost any combination of veggie you like. You can also add cheese or not, include the egg yolk or not. You can do 3 whole eggs per cut if you prefer them to only egg whites (just note the calorie change). The Qty of each ingredient can change based on your nutritional requirements but here’s a guideline.
This is a current favorite. Cheddar & Spinach
Grease a silicone muffin pan.
To each cup add the following:
- a handful of spinach to each cup.
- 1/2 cup egg whites (or 4 egg whites beaten or 2 whole eggs + egg whites etc. Lots of options)
- 15 grams (about 1 Thumb) of broken up sharp cheddar cheese to each cup.
Bake at 350 degrees F for about 20 min until they are firm. Don’t overcook!
Let cool and pop out of mold.
