Ok so I usually like to make my healthy pizza Friday nights and because I’m getting ready for a physique competition I have to make some additional adjustments to my already supremely healthy diet. This time I’m looking for something virtually carb free but still a pizza. I found a few interesting recipes online ( like here and here) and I tweaked a bit to create my own version of this awesome grain free low fat pizza.
Here’s what I did:
2 cups of cooked cauliflower ( I steamed mine)
1/4 cup egg whites
1/3 cup unflavored whey protein ( I used Genuine Health Proteins+)
1 T coconut flour
1cup dry cottage cheese ( no sodium, low or no fat)
1ts each of garlic powder, oregano, basil
1/4 tsp sea salt (omit if the cottage cheese you use has salt)
add it all to the food processor and blend.
Spread it thinly on to a cookie sheet or pizza pan lined with parchment paper
Bake for 20 min at 450 until brown and crispy at the edges
Add toppings like sugar free tomato sauce or paste, cooked red onion, red pepper, garlic and chicken and top with unsulfured sun dried tomatoes, allegro low fat cheese and cottage cheese.
Bake for another 15 or so minutes. Cut and serve! MMMMMmmmm
Keeping in mind that I’m following a pretty strict diet so things like this may taste really awesome at this moment and maybe not as awesome when I’m eating the ‘real stuff’ if you know what I mean. Anyway in my opinion it was actually really great! ( excuse the photo….I was devouring the pizza!)
