Authentic Gluten Free Pizza

This is amazing! Tastes like the real deal, the full of nastiness real pizza crusts. Chewy and delicious and clean!

Ingredients
1 cup Brown Rice Flour
1 cup Quinoa Flour
1 cup Arrowroot Flour
1 cup Tapioca Flour/starch
2/3 cup or unflavored protein powder ( I use Genuine Health Proteins+)
3.5 tsp xanthan gum
1 tsp sea salt
3 Tbs coconut oil
2 Tbs instant yeast granules
4 egg whites ( or 1/ 2 cup liquid egg whites) room temp
1.5 cups hot water

Directions
Preheat over to 400 degrees
Mix dry ingredients in your mixer. Melt coconut oil in hot water and add to flours. Blend on med high. Add egg whites. Blend on med high for 4 minutes.
Dough will be sticky!
Divide among two lightly greased pizza pans and spread with wet fingers.

Let rise 15 min
Bake crust 5-10min
Add toppings and bake 20min.
Cut each pizza into 8 pieces

The toppings I used here:
no sugar low sodium tomato sauce ( PC blue menu tomato basil)
grilled chicken breast
chopped garlic
red onion
tomato
1/2 cup allegro skim cheese
1/2 cup 1% cottage cheese (PC blue menu)
