Mocha Protein Truffles

1/2 cup Genuine Health Vegans+ Protein in chocolate (or vanilla) (or brown rice protein)
1/2 cup Genuine Health Proteins+ chocolate ( or other whey isolate)
1tsp alcohol free vanilla
1/4 tsp stevia (or 20 drops liquid stevia)
4T coconut flour
1tsp coconut oil (melted)
1/2 cup brewed cooled coffee or espresso

Mix all dry ingredients and then add liquid. Mix with a spatula to create a paste. ( If too sticky add more coconut flour, too dry add more coffee). Roll into balls and refrigerate for 30min. Remove and roll in 1T raw cacao powder.
Keep refrigerated.
