Vanilla Chia Protein Pudding

Chia seeds are amazingly nutritious. If you want to know more I wrote a post about them here.

This is a really easy basic chia pudding that you can use as you like. The chia seed will congeal with the milk to create a gel so you have a pudding like texture. You can tweak as you like by adding cinnamon, cacao or even coconut or other nuts and seeds.

Add the following to a 2 cup glass jar or container and shake until well mixed.

  • 1 cup unsweetened vanilla almond milk (or coconut milk)
  • 1 scoop Vanilla Protein powder (optional but increases protein content)

Then Add

  • 1 Tablespoon of chia seeds
  • Optional* 10 drops of vanilla stevia (if you need it sweeter) or any flavouring like cinnamon or vanilla powder

Tightly seal and shake or stir very well again. Store in the fridge for at least two hours. Shake or stir before eating.

Another option is to just combine the seeds and your milk of choice, shake and refrigerate. Then add your protein or additions when ready to eat.
