Clean Tacos

These are just like the good old tacos I used to have as a kid. The kind that came from a box and packet but these taste way better without all of the additives and filler in those store bought seasonings. Plus Gluten free!

I usually like to make a double batch of the seasoning and store it in an airtight container with my other spices for quick and easy use and you could easily triple it even. You can also just make it as needed.

You can use any ground poultry or meat or even lentils or beans is you wanted to go vegan. This whole makes take no more than 20 minutes to put together and so tasty!

  • 1 onion
  • 1 clove of fresh garlic
  • 1 package (about 1lbs) extra lean ground chicken or turkey
  • 1/4-1/2 cup of water
  • About half of my taco seasoning mix (below)

Taco seasoning mix – good for two batches (i.e. 2lbs of meat):

  • 1.5 T brown rice flour or arrowroot or tapioca starch
  • 1.5 T chili powder
  • 2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp coriander
  • 1/4 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/4 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1 tsp black pepper

Cook onions and ground chicken (or turkey or beef or any lean ground meat could work) in a pan. If you find there is any oil you can drain your pan. When meat is still pink add crushed garlic and taco seasoning. Once cooked through add about 1/4- 1/2 cup of water to create a sauce. Allow to simmer on low about 10 min.

Serve with all or any of the following for a party in your mouth!

  • guacamole or fresh avocado
  • cheese of any kind
  • fresh salsa
  • chopped lettuce, spinach or other greens
  • cilantro
  • red onion
  • shredded cabbage
  • Greek yogurt or sour cream
  • brown rice
  • black beans
  • Pimento beans
  • warm brown rice wraps cut and toasted until crispy or sprouted corn tortilla
  • crackers etc
  • Sweet potato chips
  • Plantain chips
  • Pan fried plantain

I often eat mine with no taco shell topped with sugar free salsa, avocado, maybe some cheese and chopped spinach or lettuce. If I want a shell I will toast a brown rice wrap, use a GF tortilla or eat with some gluten crackers for some crunch. I also love it with brown rice and fried plantain!
