Coconut Curry Encrusted Fish Sticks

This is a nice way to dress up white fish. Pretty much any mild, firm white fish will work. The qty is for one filet but easy to double and triple depending on how much you want to make. You can serve these with lettuce wraps like a taco or with lemon squeezed all over and baked yam chips on the side.

Ingredients

  • about 7oz of halibut or other mild white fish
  • 1 T coconut flour
  • 1 T almondmeal
  • 1tsp shredded unsweetened coconut (you can omit this if you want)
  • 1 tsp yellow curry powder
  • 1/4tsp sea salt
  • 1 egg white beaten
  • 1 tsp coconut oil

Directions

  1. cut fish into 1 inch sticks
  2. mix coconut flour, almond meal, curry, sea salt and coconut flaked together on a plate
  3. heat coconut oil in pan
  4. dip fish in egg white
  5. coat with curry mixture
  6. drop fish into hot pan
  7. brown on one side and flip until cooked through
