Having celiac has caused me a lot of stomach pain and digestion issues over the years. Once I was diagnosed and got my nutrition sorted out my attacks subsided but they didn’t go away entirely. I’m rarely if ever in contact with gluten but I do still suffer with digestion issues, pain, gas and bloating especially if I eat too much, eat too little or over do it with treats or fats. This salad is so great for an upset tummy. The fennel, radishes, lemon juice and apple cider vinegar all help with bloating, digestion and also detoxifies. Fennel is actually a super food when it comes to digestions issues, bloating and water retention. celery too! Actually all of the ingredients here are truly beneficial for health and digestion, water retention and also uber nutritious including the dressing so eat up! I generally use all organic produce and wash it really well with a solution of vinegar and water. This helps remove anything that might be an irritant to your tummy as well.
- 1 fennel bulb
- 1 crisp apple ( I like fuiji or granny smith for this recipe)
- 4 stalks of celery
- 4 radishes
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon lemon juice
- 1 Tablespoon olive oil (optional- I like it without )
- 4 sprigs fresh parsley (about 1.5 tsp chopped )
- pinch of stevia * optional (try the unprocessed herb form)
- sea salt and pepper to taste (about 1/2 tsp)
Slice the apple, fennel, celery and radish paper thin ( I used the food processor, it really speeds things, a mandolin would work well too). Mix them together in a large bowl. In a small blender or mini food processor blend the lemon, juice, ACV, olive oil, parsley, stevia and salt and pepper until emulsified. Taste and adjust as you like. Drizzle on salad and toss.
A little trick if you want to make this ahead. Slice the ingredients and prep the salad but don’t add the dressing. Instead store the salad in a glass container or dish filled with water and kept in the fridge. When you are ready to eat, drain and toss with dressing.
Enjoy this as a side with your meal or top with hemp hearts for a vegetarian protein source.
