Honey Garlic Dijon Pork Tenderloin

Pork tenderloin is a great lean meat (just about as lean as chicken breasts!) . High protein low fat and can really be tasty. Because it’s so lean it’s important to cook it quickly (or slow slow slowly like with a slow cooker with lots of liquid). Anyway today I had no time for marinating or slow cooking and I wanted something lean, clean, tasty and fast so here’s what I came up with.

Ingredients
1 lean pork loin trimmed of fat ( you could easily make more)
1 T raw honey
2T dijon
1 huge garlic clove minced
1/8 tsp crushed red pepper flaked
pinch of sea salt and pepper

optional sauce
1/2 cup unsweetened apple sauce
1/2 tsp olive oil
1 clove of garlic
1 T raw honey
1T dijon
pinch of red pepper flakes
Directions
Preheat oven to 500F.

Mix the honey, mustard, garlic, red pepper and salt and pepper together and rub all over meat. Place tenderloin on a tin foil lined baking sheet and lightly cover with another piece of foil. Roast at 500F until reaches a temp of 150-155 degrees (about 25 min). Let sit 5-10 before cutting.

While cooking meat add garlic to a sauce pan and lightly cook with a tiny bit of olive oil. Add applesauce, honey, dijon and red pepper. Heat through and serve with meat.

I served this with roasted apples and onions (put them in before you start the meat rub so they get a head start and will be done at the same time as the meat).
