Nice sirloin roasts or top sirloin roasts are often on sale so it makes it a great cheap meal that helps keep things interesting and my meat loving hubby happy. This recipe was inspired by one similar from Clean Eating Magazine. It’s really tasty!
1-3 lb boneless sirloin top roast
3 cloves of garlic crushed ( or 2 T garlic powder)
1/2 cup ground coffee
1tsp ground rosemary
1/4 cup balsamic vinegar
2T olive oil
1/2 tsp sea salt
1/2 tsp peper
Add roast and marinade to a large ziplock and marinate in the fridge for 2-24 hours.
Preheat oven to 450F
Place roast on rack in roasting pan and roast 10 min then reduce heat to 250F and roast until temp reads 130-140F depending on well you like your meat (about 1 hour). Let sit 10 min before carving.
