Sundried Tomato and Oregano Stuffed Chicken Breasts

You can stuff chicken a lot of different ways with a lot of different things. Here’s one quick, tasty and of course clean option.

2-3 Chicken breasts trimmed of fat and pounded flat
1/3 cup low sodium, low fat dry cottage cheese
1 garlic clove minced or 1tsp garlic powder
1tsp oregano (I used dry)
2tsp sundried tomatoes chopped (not packed in oil and look for sulfate free)
1tsp balsamic vinegar
1T walnuts ( or any nut)
sea salt and pepper as you like 

Preheat oven to 350F
Mix cottage cheese, oregano, garlic, vinegar and nuts in a small bowl.
Lay out pounded chicken breasts and add about 1T-1.5T to each breast. Roll up and secure with a couple toothpicks.
Sear breasts in a hot pan and then place on baking sheet. Lightly cover with foil and bake about 20min until done.

Remember to remove toothpicks before serving!
