Sweet & Sour Chicken Meatballs

Ingredients

Meatballs
1lb extra lean ground chicken or turkey
1tsp garlic powder
1tsp  onion powder
1T worcestershire  * look for a gluten free version. (note: this is often not gluten free as it contains malt vinegar or barley. It is a tiny amount so depending on how sensitive you are you will want the GF version or substitute with gluten free soya sauce)
2T egg whites
1T almond milk
1/4 tsp sea salt
1/4 tsp pepper

Sweet & Sour Sauce
1 onion diced
1 red pepper diced
1T worcestershire*
4T gluten free, low sodium soya sauce
2tsp apple cider vinegar
1tsp garlic powder
1tsp onion powder
1tsp ginger powder
1T yellow mustard
2T arrowroot flour ( starch)
1 can of crushed pineapple (unsweetened)
5 drops stevia* optional

Directions

Preheat oven to 350F . Line baking sheet with parchment papper.

For sauce- cook onions and red peppers in a sauce pan on stove top. ( I usually do this with the lid on so there is no need to add extra oil). Once soft add arrowroot flour and cook 1 min. Then add all other ingredients and let simmer until meat balls are done.  

For meat balls add all ingredients to a large bowl adding chicken last. Mix gently by hand and roll about 1T of meat mixture into balls and place on paper. You will end up with about 20 meat balls. Bake for about 20 min until done.

Serve meatballs on brown rice with sweet and sour sauce on top. Delish!
