Happy Canada Day!
Today is the last day of my mini staycation. I had 5 glorious days off and somehow booked my self solid with things to do. Oh story of my life. It was really great though!
Foodwise here’s what I put together for the rest of this week.
I marinated a few chicken breasts in Harissa spice paste and then grilled them. Harissa is a Middle Eastern spice and has hot, spicy and full flavour to it and includes chillies, cumin, coriander and garlic. You can buy Harissa as a paste or as a dry spice or could make your own. If you buy it look for one sugar and sulphite free. The spiciness of it is really nice paired with cooling yogurt so I made a little greek yogurt mixed with dill, garlic and mint to go along with my chicken and rice.
I made lean beef burgers that I’ll either have with avocado on a lower carb meal or with a bun on a higher carb meal.
I also made the thai chicken I made last week so I could perfect the recipe for you but I’m terrible and I forgot to write it down so it needs a little tweaking before I post it. Sorry!
For carbs I made brown basmati rice, sweet potatoes roasted on the the BBQ spiced with cayenne, cinnamon and sea salt. I also made my lemon blueberry coconut protein muffins (minus the shredded coconut today). So nice with a coffee.
For quick mornings I made my good old spinach cheddar egg bites (yippie eggs and cheese are back in my diet 😉 ) measured out some GF oats and also pre packed my shakes so they are in the freezer ready to blend (currently fruit, protein and a fat source). I either use a ziplock or the mini blender jars and just freeze until ready to blend. Makes things really quick!
