What I Made Monday Feb 16th {Meal Prep}

Happy Family day!

I had a busy weekend of clients, writing, home improvements, gym going and family events. Very productive 🙂

I spent some time in the kitchen today but not as much time as usual. I just wasn’t really in the mood as I was distracted with other things in the house so I made it quick.

This morning I added a few (4) chicken breasts to the crock pot along with about 2 tablespoons of salsa and maybe half a teaspoon of chilli powder, coriander and cayenne. It was done in less than 4 hours and I just shredded it up to use as topping on rice, tortillas, salads or in lettuce cups. Really easy to portion out, freeze and eat!

I made a pot of brown rice ( so far so good after adding it back in my diet) as well as sort of a guacamole, it’s just avocado with fresh minced garlic,  lime juice and sea salt. So good with the shredded chicken!

I made triple batch of meat balls using whatever spices I had handy since I’m out of chipotle….so oregano, garlic, cumin, cayenne, dry mustard and thyme. I also made a batch of my apple sage breakfast sausages. I also baked salmon portions seasoned with a little lime zest, ginger and sea salt plus I  have some beef cuts ready go for quick dinners.

Other than that I steamed some golden beets, washed and cut up some broccoli and made sure to have lots of fresh salad mix on hand.

I also made batch of the protein cookies I’ve been recipe testing with and another batch of this cinnamon chocolate protein loaf into muffins.

Ready for a week of fat burning workouts and hormone balancing nutrition 😉
